Coelho Assado ao Molho de Laranja
Cooking a delicious Coelho Assado (Roast Rabbit) with a tangy orange sauce is an amazing experience for your dinner parties in Brazil!
- Ingredients:
- 2 rabbits
- 4 tablespoons of olive oil
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 2 oranges, juiced
- Salt and pepper to taste
- Few sprigs of fresh thyme (or rosemary)
Instructions: Start by seasoning the rabbits inside and out with salt, pepper, and a bit of olive oil. Sear them in a hot pan until golden brown. Move to your preheated oven at 350°F (175°C) for about an hour or until cooked through. While they roast, make the orange sauce by sautéing onions and garlic with a touch more olive oil. Stir in the orange juice and herbs, letting it reduce until thickened.
When your rabbits are done cooking, let them rest while you pour over the hot orange sauce. Serve this Coelho Assado with rice or mashed potatoes for an authentic Brazilian dinner experience!
